oatmeal breakfast bars
this was an experiment, to see if i could actually really make my own granola-y bars. having only rolled oats on hand, i used them instead of granola. you can see a list of substitutions you could make in YOUR bars here.
in a big bowl, i mixed with a rubber spatula:
3-4 cups unsweetened rolled oats
1/2 cup coconut flakes
3/4 cup currants
1/2 cup sliced almonds
3/4 cup homemade cranberry jam 
1 cup agave nectar*
1/2 cup molasses*
cinnamon, cloves, ginger, & nutmeg
*you may have to add more moisture to get them to stick together, at most we used 2 cups total liquid
when that was thoroughly mixed, i spread it on a greased pan, and put it in a 350F oven for about 25 minutes.
while that’s baking, make the raspberry topping! in your food processor, mix 1 cup raspberries and 1/4 cup applesauce until it’s the consistency of a thin jam.
when the oats are baked (they should be a darker brown, with the edges crispy), take out of the oven, drizzle with the raspberry sauce, and cut into bars with a large, sharp knife. refrigerate overnight, cut and separated. they should be fully solidified by then.

these used a lot more sugary ingredients than i wanted, and the next time i make granola bars they’ll be a lot healthier. the closest commercial product to this that i could think of are these - except ours are much better for you! these are cheap to make, filling, perfectly sweet and fruity, and totally appropriate for a quick breakfast!
