Never Leave the Playground

This is probably one of the most inspiring and awesome videos I’ve ever seen on staying fit and healthy into old age! Meet Stephen Jepson, a 71 year old man who hasn’t forgotten what it’s like to play and have fun.  And he’s thriving!  

I want to be as healthy as he is when I’m that old!

Protein Pudding Pies

I created these wonderful things today and I am so excited about them.  They taste great and they are an awesome dessert that is pretty high in protein and fairly low in carbs and fat but you can always tweak the macros to your liking.

I made a Chocolate version and a Vanilla and experimented with the amount of protein.

Filling Ingredients:

  • 3 servings of Jello Pudding Mix (Whatever flavor you like. The box I used had 6 servings in it)
  • 1/2 cup of Almond Milk
  • 1/2 - 1 scoop of protein powder (This is person preference. I found that my protein powder didn’t change the taste whether I used 1/2 or 1 whole scoop but different powders are different. You also may or may not need to add more Almond milk if you use more protein powder. You could use chocolate or vanilla flavor depending on which pudding flavor you use. I used vanilla for both.)

Crust Ingredients:

For the crust I used one of my protein pancakes and baked in a bowl with a smaller bowl on top of it to get it into a pie crust shape and to make it a little crisper.  It worked great!  You could  also use real pie crusts

  • 1/4 cup egg whites
  • 1/4 cup cottage cheese
  • 1 scoop vanilla protein powder
  • cinnamon
  • (makes 2 pancakes/pie crusts)

Assembly Instructions:

  1. Mix all of the filling ingredients together for about 2 minutes 
  2. Bake the pancake in a bowl with a smaller bowl on top in a toaster oven at 400 degrees F for 10 minutes 
  3. Put the filling in the crust
  4. Top with your choice of toppings (slivered almonds, berries, peanut butter, etc.) 
  5. Put in the freezer for 5 minutes to chill 
  6. EAT ;)

That’s it! Let me know what you think! It’s pretty easy to do. Especially if you have the pancakes pre-made.

The macros will be highly variable depending on what brands you use but for example, for 1 pie mine are: 

  • Calories ~ 235 (1/2 scoop protein powder) or 280 (1 scoop)
  • Protein - 24g (1/2 scoop protein powder) or 33g (1 scoop)
  • Carbs - ~21g
  • Fat - 2g

It Just Keeps Getting Better!

So today I am on FIRE!!! In addition to the awesome things that already happened (seen below), I can now add to the list a NEW JOB!! Yep! I’m now on the Special Events Staff for Campus Recreation at my school!

This job is going to be so fun! I’ll get to plan fun events for students and staff to do.  I’m hoping to be a valuable asset to the team because I have experience with planning events since I joined the LUNA Chix team.

Being part of LUNA Chix has opened lots of doors for me.  My leadership has improved, my cycling has improved, I’ve made lots of connections, and I’m having so much fun!

Today is going Super-fantastically-awesomely-swimmingly-fabulously well!!
1) Got an A on my Anatomy Exam (96.61)
2) New Squat PR  - 155 lbs!
Let’s see what else I can add to this list today!!

This is me slaloming this morning! So much fun! I haven’t done it in a year but I was able to get up just fine and still carve back and forth pretty well.  I guess it is just like riding a bike, you never forget! 
My sister and I used to go to water ski camps when we were little and the counselors were all competitive water skiers and wakeboarders.  We learned to slalom, knee board, wake board and barefoot ski.  (<—-barefooting is scary as hell). :D

Awesome Day

Today was a great day overall.

I got lunch with a really good friend and we talked for a long time about life and boys and school and all that jazz.  I love my good friends!! We’re going to watch a movie tomorrow night too so that’s something to look forward to!

I got some studying for calculus done and was surprised with how much material I remembered, so that’s an optimistic sign!

I had a great workout at the gym today! Thank for the suggestions to everyone who answered my questions! A used a couple of them to make a great high intensity strength workout for myself and I hope I’m sore tomorrow!

I had a great spin class today too. My favorite instructor Emily taught the class and it was tough.  She said she’s going to come on this week’s LUNA Chix ride too! Awesome!

I think my good mood can mostly be attributed to how much sleep I got last night.  Definitely going to repeat that dream sequence!

I hope everyone else’s day was splendid as well!

Macca Shooting for London Olympics

This is awesome. There isn’t a better way to describe it. Macca is one of the greatest triathletes ever—he’s raced and won just about every race of significance on the planet and this is the only thing that’s eluded him. I’m getting goosebumps just reading this article. I know that same raw emotion just blasting through his veins right now. Awesome. Just awesome. More to follow!

i want those shoes!!
from what i know, these neutral shoes are sort of modeled after the gel ds trainers except they are considered tri shoes (i believe tri shoes are meant to be slip ons and don’t require socks, which would make sense since that would save some valuable transition time). they are actually lighter than the ds trainers too.
the shoes were named after the noosa triathlon.

How cool are these shoes!?!?
